Have too many avocado’s on hand! Avocados are notorious for having a fickle self life but don’t worry! Here are three ways to use up avocados in a delicious manner.
1. Avocado Sweet Potato Toast
Ingredients:
- 1 large sweet potato
- 1 ripe avocado
- 2 tsp olive oil
- 1 tsp cumin
- Pinch of sea salt
- Optional dash of cayenne pepper
Use your mandolin slicer or a chef’s knife to slice 1/4th inch slices of sweet potato. Toast the sweet potato slices in your toaster or maximum heat for two cycles. Allow the sweet potato to cool for a few minutes (it will be hot). Mash the avocado with the spices and spread it onto top of the sweet potato “toasts”. Top with a dash of the olive oil and sprinkle of sea salt. Additional toppings can include fresh basil, sliced cherry tomatoes, or sun-dried tomatoes. 2. No-bake Avocado truffles
Ingredients:
1 ripe avocado (mashed)
1/2 cup of melted chocolate chips
1/2 tsp vanilla extract
1-2 tbsp cocoa powder (for rolling)
Directions:
Melt chocolate chips in the microwave. Pour the melted chocolate into a bowl with the mashed avocado and stir in the vanilla and pinch of sea salt. Roll the mixture into 1 inch balls and refrigerate for at least 30 minutes or until they are hard. Roll each truffle in the cocoa powder or shredded coconut or pistachios. Store in the refrigerator until ready to enjoy!
3. Blend them up in a salad dressing
