Breakfast is my favorite meal of the day! The recipe below is a great vegan chocolate waffle recipe that creates about 8-9 individual waffles or 3-4 Belgium waffles. These waffles are so fluffy and chocolatey they also make a great afternoon snack! You can add peanut butter and banana to amp up the protein and make a hearty breakfast sandwich.
Ingredients:
- 1 1/2 Cups whole wheat or white flour
- 1/2 Cup cocoa powder
- 1/4th Cup sugar
- 1 Tbsp baking powder
- Dash of salt
- 2 Cups almond milk or your milk of choice
- 1/4 Cup coconut oil or olive oil
- Optional toppings: Yogurt, fresh fruit, dried fruit, nuts, sprinkles, or butter.
Directions:
Combine the dry ingredients in a large bowl and whisk to eliminate any lumps
Combine the almond milk and oil in a separate small bowl
Pour the wet ingredients into the large bowl with the flour and fold until the batter is thick (add more milk if it is too thick)
Using a 1/4th cup scoop (if you are using an individual waffle maker) or a 1 cup scoop if making a larger amount pour the batter onto a non-stick waffle iron and cook according to direction
Waffles are best enjoyed warm but you also freeze them and re-heat in the toaster!
To make a sandwich:
Top waffles with 1 tbsp nut butter or yogurt and add your favorite toppings such as fresh fruit, nuts, or butter.
