How did it already become October?! No matter how overwhelming the change of seasons can feel I always look forward to welcoming the new fall flavors. Below are three of my favorite fall recipes that I wanted to share as they are not only “healthy” but also easy to make and delicious!
Harvest Muffins
Ingredients:
- 3/4th Cup apple sauce
- 1/3rd Cup maple syrup or honey
- 1 Tsp vanilla extract
- 1 Tsp cinnamon
- 2 Tsp baking powder
- 3/4th Tsp baking soda
- Dash of salt
- 1.5 Cups grated carrots
- 1 Cup rolled oats
- 1 Cup whole wheat flour
- 1/3rd cup of diced apple (optional)
- 1/3rd cup of diced walnuts or pecans
- Cooking spray
Directions
1. Preheat your oven to 350 degrees F and line a muffin tin or bread pan with cooking spray
2. In a large bowl combine the flour, carrots, baking powder, baking soda, rolled oats, honey, apple sauce, cinnamon, salt, and vanilla extract
3. Fold in the diced apples and chopped nuts
4. Transfer to your baking dish and bake for 15-20 minutes or until the center is firm
5. Allow to cool for 10-15 minutes then top with an optional apple butter or almond butter and enjoy!
- 2 Cups diced and peeled apples
- 2 Cups of flour
- 2 Tsp baking powder
- 3/4th Cup of sugar
- 1 Cup of milk (I use almond milk but any milk will do)
- 3.5 Tbsp oil or mashed banana
- 2 Tsp vanilla
- Dash of salt
- 1 Tbsp cinnamon on top
Directions:
1. Pre-heat the oven to 350 degreeās F and line a muffin tin or grease a loaf pan
2. Stir the apples, flour, baking powder, and salt in a large bowl.
3. Add in the sugar, milk, oil, and vanilla.
4. Stir until well incorporated and pour into the muffin pan or loaf pan
5. Bake for 25-30 minutes or until the center is firm, allow to cool for 15-20 minutes then enjoy!
Pumpkin Hummus
Ingredients:
- 1 small clove of garlic or 1 tbsp garlic powder
- 1 15-ounce can of chickpeas
- 3/4th cup of pumpkin puree
- 1.25 tsp ground cumin
- 2 Tbsp fresh lemon juice
- 1 Tsp maple syrup
- 1 Tbsp olive oil
- Salt and pepper to taste
Directions:
1. Peel and finally chop garlic
2. Drain the chickpeas and add the chickpeas, pumpkin puree, salt, cumin, lemon juice, maple syrup, and olive oil to a blender or food processor
3. Blend thoroughly to combine
4. Serve with your favorite dipping sides such as crackers, chips, or veggie slices!
