Not to mention, one serving of zucchini fritters also provides roughly 1/3rd of your daily recommended fiber in take. You can substitute gluten free flour to make this recipe gluten free, and it is already naturally dairy free and vegan.
Zucchinis are cost efficient and versatile! The zucchini is technically a fruit but it is often viewed as a vegetable due to its ability to contribute to savory cooked dishes.
Zucchinis can be grated and baked into a bread or muffin, sautéed into a pasta, or enjoyed raw in a salad. Zucchinis are great for digestion as they contain lots of fiber. They are also rich in antioxidants and vitamin A and C.
Ingredients
- 3 cups of grated zucchini (appx. 2 large or 3 medium zucchinis)
- ½ onion chopped
- 1 cup flour
- 1 Tbsp minced garlic
- 1.5 Tsp baking powder
- ¼ cup Nutritional yeast
- 2 Tbsp olive oil
Optional Ingredients
- Diced mushrooms
- Cayan pepper
- Black beans
Directions:
Mix the grated zucchini with the onion, flour, garlic, baking powder, and nutritional yeast. Heat the olive oil in a skillet on medium heat and add drops of the zucchini mixture sautéing it for 4-5 minutes on each side.
