With Easter just a few weeks away it seems only right to share the story of an egg 🥚🐥company who is truly putting family at the heart of their mission and helping provide ethically produced foods to people across the country.
Fun fact- growing up I had a pet chicken named Tweetie Bird 🐣this hen was the reason I became a vegetarian because my logic was if Tweetie Bird is my friend then I don't want to eat her. 🙅🏻♀️
Later in life I became a vegan because I was so discouraged by the egg industry I refused to buy store eggs. When I was pregnant I started eating eggs again to help increase my Omega-3 and protein intake but I would always get my eggs from neighbors who had hens or farmers markets 👩🏻🌾🍳(which is not always the most convenient). Then I discovered Vital Farms!
At Vital Farms all the hens are pasture raised which means the hens have at least 108 square feet or pasture with access to fresh air and sunshine ☀️year round. They even have a code on the side of each egg carton that you type in on their website and see live footage of the hens where your eggs came from. 🐥🐥🐥Vital farms is also rooted in the concept of conscious capitalism where they look out not just for the animals but also their employees and their farmers.

In case you missed @nbccalive this past week @malounubla and I brought you cold and flu fighting recipes but these muffins are sooooo good you can enjoy them regardless of your health and sniffle status! 🤧🙅🏻♀️🫐🍲
My younger sister helped me whip up these #tumericblueberrymuffins and we almost ate all of them in one sitting 😎
Recipe below 👇🏼
Blueberry Turmeric Muffins:
2 cups of oats (blended in food processor or blender)
2 ½ teaspoons baking powder
1/2 cup of honey, sugar or maple syrup
1 cup unsweetened almond milk*
1 large banana mashed
1/2 tbsp ground turmeric
1 teaspoon vanilla extract
1 ½ – 2 cups blueberries, fresh or frozen
Directions:
1. Pre-heat oven to 350 degree's F and line a muffin tin
2. In one large bowl mash banana with a fork. Stir in the vanilla extract, honey or sugar, ground turmeric, and blended oats.
3. Add the almond milk a little at a time until the batter comes together, then stir in the blueberries.
4. Scoop 1/4th cup of the batter into the muffin pan and bake for 20-25 minutes until a toothpick inserted to the muffins comes out clean.

These little guys are #glutenfree #dairyfree and #lowfat plus they are full of veggies like 🥦🥕🌶🫑🙌🏼 Recipe 👇🏼
Ingredients:
2 cups chickpea flour
1/2 cup nutritional yeast
1 tsp baking powder
1/2 tsp paprika, turmeric, and black pepper (additional spices are optional)
2 cups of plant based milk
Diced and cooked veggies of your choice
Direction:
1. Preheat over to 350F and line a muffin tin
2. Mix all dry ingredients in a bowl.
3. Stir in milk until well incorporated
4. Fold in diced veggies
5. Scoop 1/4-1/3 cup of mixture into muffin pan
6. Bake for 30 minutes
7. Allow to cool and enjoy 😊
