I’ll admit it. I am the girl who used to put potato chips in her sandwich. I love chips so much I think I’ve even made a sandwich with JUST potato chips in the middle. When you go vegan there is no need to give up the things you love. In fact, it’s just an opportunity to embrace, appreciate, and respect the origin of the foods you love! Today I wanted to share this simple baked sweet potato chip recipe because it makes a great snack when paired with cashew cream cheese, or it is a perfect side to your sandwich.
Ingredients:
- 1-2 Large Sweet Potato or Yams
- 1 Tablespoon olive oil
- Salt and pepper to taste
Pre-heat your oven to 400 degrees C. Cut your sweet potato in half so it is easier to use on the mandolin slicer. Using the hard guard create uniform slices about 1/8th of an inch thick (the thinner the slice, the crispier the chips will be). Toss the slices in olive oil and sprinkle with salt and pepper. Roast in the over for 45 minutes- 1 hour occasionally shaking the pan. Let you chips cool down and enjoy!
